Fluffy homemade biscuits are one of the easiest things a baker can throw together in minutes. They’re one of the first recipes a novice baker will take on. Only five ingredients, with little skill needed. No special tools or long baking times. And yet, I haven’t made homemade biscuits in nearly two years… a crime if you ask me!

After realizing this, I decided I needed to create my very own biscuit recipe. Fluffy, easy to make, and satisfying any buttery carb craving, these fluffy, homemade biscuits can’t be competed with. I love southern-inspired dishes and these easy, fluffy biscuits pair well with practically any breakfast or dinner meal. 

You can go the sweeter route by melting butter and adding jam on top. Or you can add a savory kick with eggs, bacon, cheese, and your favorite hot sauce for a big breakfast sandwich.

My mouth is practically watering just imagining all the possibilities!

Easy, Fluffy Biscuits

Can I use buttermilk or cream instead of milk?

Of course. Buttermilk will give it a bit more of a tang, while cream has a higher fat content that makes these even richer in taste (while still creating those sought-after light, flaky layers). Scale back on the butter if you do use heavy cream, though.

Can I make these sweeter?

Add about ½ cup of granulated sugar to the dough to make a sweeter biscuit that is great with dessert. Doing this can create a great base for a strawberry shortbread dessert. Yum!

What other mix-ins could I add?

Cinnamon, citrus zest, raisins or other dried fruits, fresh berries, or chocolate chips could all be add-ins to your biscuits. I give you a recipe that is perfect on its own, but it also makes a great base for a biscuit dough that you want to dress up or add more flavor to.

Ingredients | easy, fluffy biscuits

Flour – All-purpose flour is what I recommend using for creating these perfect homemade biscuits. 

Baking powder – Baking powder allows the dough to rise as it bakes. It’s a key ingredient to create soft and tender biscuits.

Salt – Use a table or sea salt to add strength to the dough. Salt helps any type of dough hold its shape well by binding the gluten proteins in the flour together.

Butter – I prefer Irish butter, but any real butter will do. Be sure to keep it cold right up until it’s cubed and added to the bowl of dry ingredients. The cold butter helps create flakier biscuits.

Milk – Whole milk is preferable to lower fat milks in this fluffy homemade biscuit recipe. The extra fat helps create a flakier, lighter texture.

How to Make Easy, Fluffy Biscuits

Preheat the oven to 375ºF and line a cookie sheet with parchment paper.

Start by whisking the dry ingredients together in a mixing bowl: flour, baking powder, and salt. 

Next cube the butter if you haven’t already done so. Toss these cubes into the bowl of dry ingredients, using a pastry cutter to cut the butter in. 

Butter cubes are cut into the dough for biscuits.

Once combined, pour in the milk. Use a rubber spatula or wooden spoon to stir this mixture together just until the dough forms.

On a lightly floured surface, place the dough in the center and begin rolling it out with a rolling pin. Roll to about a ½ – 1-inch thickness, depending on how tall you prefer your biscuits.

Use a biscuit cutter to cut into round disks and place them directly onto the cookie sheet.

Brush the melted butter on the tops of the biscuits to help them turn a light golden brown as they bake. 

Bake at 375ºF for 18-22 minutes. (If you opted for 1-inch thick biscuits they may require a few more minutes.)

Serve warm with butter, jam, or honey.

Tips for Success | easy, fluffy biscuits

Do not overmix the biscuits. Mix just until a dough forms. Overmixing can create a denser dough. This will result in harder, tougher biscuits, thus losing their light and fluffy texture we want to create. 

If you don’t have parchment paper or a baking mat, simply spray a baking sheet with non-stick cooking spray. 

If you don’t have a biscuit cutter, use a jar or a drinking glass to cut the dough into round disks.
