I can’t believe I’m just now realizing I haven’t added a bagel recipe to this blog! Especially since bagels are pretty much my love language, especially when I was pregnant (and now that I have ravenous hunger from breastfeeding).
I’ve been debating on whether to stick to a more traditional bagel recipe or something a bit simpler to throw together in minutes…
Well, with a baby in tow these days, it was an easy decision to make. I am all about efficiency and saving time these days.
Sure, they will still be homemade and you will still have some mixing and shaping to do, BUT there are only a few main ingredients, no waiting around for the bagels to rise, and no boiling them in a pot of baking soda water before blasting them away in the oven.
We’re avoiding lots of extra work today, let’s just say that. (And saving precious time!)

Let me also just say these bagels are higher in protein, too. They contain greek yogurt which adds a boost of protein and calcium. They’re more filling and a more well-rounded breakfast meal to start your day.
I love how golden brown and soft these come out! Even though we’re skipping a few steps, the texture and flavor are not at all compromised in this recipe. Not one bit.
Bagels are great for making sandwiches out of (breakfast or lunch), topped with butter that melts deeply into the center, or slathered with a thick layer of my personal favorite: whipped cream cheese.

Beat an egg in a small bowl and brush this over your bagels before baking. For extra deep color: use only the yolks which are richer in fats to develop a deeper golden color.

1 1/2 cups plain greek yogurt – Use plain, unsweetened greek yogurt for a rich dough that is full of protein.
1 1/2 cups bread flour – Bread flour contains more protein that gives it a chewier texture with more structure. I recommend King Arthur Flour.
1 tbsp baking powder – Since there’s no yeast present, baking powder helps give the bagels a nice rise.
3/4 tsp salt – Use table or sea salt to flavor the bagel dough.
1 egg (or 2 tbsp melted butter) – Eggs create a rich mixture of fats that help the browning process of the bagel. If you don’t have eggs, you can also use a little oil or melted butter on top.
Toppings of your choice – Before baking, top with seeds of your choice, minced and dried garlic or onions, chives, shredded cheese, or cinnamon sugar.

1. Preheat the oven to 425ºF.
2. Start by measuring the bread flour, baking powder, and salt into a bowl and mixing it together with a fork.
3. Next add in the greek yogurt and begin to combine.
4. As the dough begins to form, start kneading it together with your hands.
5. As it comes together, turn the dough onto a lightly floured surface.
6. Then knead until the dough is slightly elastic and the dough is shiny, for about 2 minutes or so. Form the dough into one big ball.
7. Using a bench scraper, divide the ball of dough into 6 pieces.
8. Roll each piece into a small ball. Slightly flatten it down a bit.
9. Place on a silicone baking mat or parchment paper and pierce each center of the dough balls with your finger. Create a small hole in the center for the classic bagel look.
10. Beat together 1 egg in a small bowl and brush it lightly over the tops of the bagels. Add desired toppings.
11. Bake at 425ºF for 17-20 minutes or until bagels are a light golden brown color.
12. Remove from the oven to cool for about 10 minutes before slicing them open in half.
13. Serve warm or room temperature. Toasting each half in the toaster is optional. Add desired toppings before devouring.

If you don’t have bread flour on hand, you can use all-purpose flour instead. It will be slightly less chewy than this recipe.
You can poke holes in the center of your bagel mounds OR you can roll them into ropes and join the ends together for slightly larger holes. If you use your finger to poke a hole, wet your finger first before piercing each dough disk in the center to prevent sticking.
