Crockpot Vegetarian Baked Beans

One of the most classic summer cookout foods is by far baked beans. They go together perfectly with potato salad, watermelon, corn, burgers, deviled eggs, lemonade–you name it. 

Now, I know most people these days buy a few cans and throw them onto the stovetop to warm them. But this year I really felt like making some from scratch. With my recipe, I do cheat a little by using canned navy beans instead of dry ones, but this really speeds up the cooking process. I think it’s worth it in this case.

However, I still make the sweet and smoky bbq-flavored sauce it simmers in from scratch to give it a little more pizazz. I like to make it in the crockpot so it’s easier to tote around and so I have more space on the stovetop for other foods. 

It’s a win-win.

Another reason I prefer making these myself is that typically the premade ones come with some sort of pork bits in them. I get it. Americans like their meat. But I, however, do not. I love adding lots of delicious seasonings, smoky flavor, and a hint of sweetness. But I just don’t do meat like most people do. 

I can’t get enough of these baked beans and personally always enjoy them at a picnic or cookout. It’s nice to now finally have a recipe under my belt to bring some that don’t come entirely from a can!

So today, let’s get into exactly how I make these quick and easy crockpot vegetarian baked beans…

Crockpot Vegetarian Baked Beans

Do vegetarian baked beans taste different? Do you throw a lot of veggies in?

I”m here to tell you that these vegetarian baked beans taste just as good as the ones with meat in them. I don’t add a lot of veggies into them just because they’re vegetarian. Just because something is labeled as vegetarian does not mean “filled with veggies.” It simply means “minus the meat.” These baked beans are great and you won’t miss the meat. Promise.

Why do you recommend a crockpot for cooking these?

I personally prefer using a crockpot because if you need space on the stove this is an easy recipe to throw together in a crockpot. It’s also easiest to transport and keep warm at a potluck event. If you’re pressed for time you could cook them on high for less time, but if you have all day, you can also cook them on low. Simmering them on low really allows them to soak up all the flavors without overcooking, too.

Ingredients | crockpot vegetarian baked beans

Beans – Use navy or pinto beans for the best baked beans.

Ketchup – Ketchup is a great tomato-based condiment to add for flavor to make the BBQ sauce that coats the beans.

Molasses – Molasses adds a deep color and a hint of flavor to the vegetarian baked beans. I use blackstrap molasses in this recipe.

Vinegar – Vinegar adds a slight tang to the baked beans. I use a white distilled vinegar, but apple cider vinegar also works.

Honey – Honey adds the right kind of sweetness to BBQ baked beans that make them more palatable.

Salt – Salt enhances the overall flavor. Use table or sea salt.

Red onion – Diced red onions add depth and flavor to this dish. Mince them very finely so picky eaters won’t even notice.

Garlic – Add garlic for a bit more flavor and bite. I prefer fresh, but powdered garlic works too.

Liquid smoke – Liquid smoke gives the BBQ beans a smoky flavor.

Chili powder – A hint of chili powder adds flavor and kick.

Worcestershire sauce – Worcestershire sauce adds a salty, robust taste.

Olive oil – I add just a little bit of olive oil to flavor the beans and add some healthy fat.

How to Make Crockpot Vegetarian Baked Beans

Start by draining the beans and adding them to the crockpot.

Measure and add the rest of the ingredients in and stir thoroughly.

Set the crockpot on low for a total of three hours. Stir once or twice every hour or so.

Serve warm. Store in an airtight container in the fridge for up to four days.

If you’re short on time, throw the crockpot on high and cook for one hour or so, in total, instead of three hours on low. Be sure to stir halfway through.

  • 1/2 cup ketchup
  • 1/2 cup honey
  • 1 red onion, chopped
  • 2 cloves of garlic, minced or 4 tsp garlic powder
  • 1 tsp salt
  • 2 tbsp blackstrap molasses
  • 2 tbsp white distilled vinegar
  • 2 tsp liquid smoke
  • 1 tsp chili powder
  • 2 tbsp Worcestershire sauce
  • 2 tbsp olive oil

Instructions

  • Start by draining the beans and adding them to the crockpot.
  • Measure and add the rest of the ingredients in and stir thoroughly.
