It’s avocado season pretty much all year long in my household. Not because I live somewhere warm and tropical, but because I tend to buy and consume avocados all year long. There is never a bad time for them in my opinion.
Don’t get me wrong, I love to eat seasonally. But thankfully we have the convenience of purchasing non-local produce at grocery stores whenever we please.
Avocados are just too darn delicious and nutritious to limit them to a season of the year. And since I live in the Midwest, I will never be able to get them locally. But that doesn’t mean I’m giving them up from my diet.
What’s the hype with avocado toast?
Toast is a breakfast staple in most households, and it’s been that way for a long time. Toast is quick, cheap, and convenient. Plus, you can even choose healthier varieties like whole grain and sourdough breads for a nutritious boost.
There are so many ways to dress up your toast.
Avocado toast, in particular, is a special kind of fancy (or at least that’s what us millennials are told).
Basically, you mash up an avocado on some toast (artisan bread works best) and add whatever seasonings and toppings you love. You can even make an open-faced sandwich with some eggs on top, too.

Bread – Artisan-style bread works best because it is thicker and chewier and provides more stability for a thick layer of mashed avocado.
Avocados – Any type of avocado works. Choose your favorite or what’s available to you.

Tara’s Traditional Avocado Toast
Start by toasting your bread of choice.
Then begin cutting the avocado in half. Remove and discard the pit.
Carefully slice the avocado inside the skin (don’t cut through the skin). Scoop out carefully and place on toast.
Squeeze lemon juice, drizzle olive oil, and season with salt. Finally top with fresh or dried chives. Serve immediately.

- 1 avocado
- fresh lemon juice a good squeeze
- 2 tsp extra virgin olive oil
- sea salt, to taste
- chives fresh or dried
Instructions
- Start by toasting your bread of choice.
- Then begin cutting the avocado in half. Remove and discard the pit.
- Carefully slice the avocado inside the skin (don’t cut through the skin). Scoop out carefully and place on toast.
- Squeeze lemon juice, drizzle olive oil, and season with salt. Finally top with fresh or dried chives. Serve immediately.
Notes
Hearty Avocado Toast with Eggs
Start by toasting your bread of choice.
In a small saucepan, over medium-low heat, heat olive oil.
Once oil is hot, crack two eggs in and cook for about 2-3 minutes, until cooked to your liking. Season with salt.
Flip eggs and cook for about another 2+ minutes on that side. Remove from heat and set aside.
Then begin cutting the avocado in half. Remove and discard the pit.
Squish out the avocado from the skins. Mash directly on toast with a fork.
Squeeze lime juice over avocado toast and then top with pan-fried eggs. Serve immediately.

- 1 avocado
- 1/2 lime juiced
- sea salt, to taste
- cherry tomatoes, halved
- balsamic glaze optional

- Start by toasting your bread of choice.

- Squish out the avocado from the skins. Mash directly on toast with a fork.
- Squeeze lime juice on top and season with salt. Finally top with halved cherry tomatoes.
- Drizzle with balsamic glaze, if desired. Serve immediately.
Notes
Tips for Success | avocado toast toppings
Mash the avocado directly on the toast. This will save you dishes to wash. But this is also why it’s important to choose an artisan bread (not a sandwich bread) for these recipes. Artisan bread won’t tear while you mash.
Any citrus juice works to add flavor to avocados. Lemon and lime juice are most popular and really enhance the avocado flavor, so I highly recommend always using one of these regardless of the recipe/toppings you choose.
Don’t forget to season. It can be easy to get carried away with all the other fun toppings. Sea salt is my go-to seasoning and I’ve never had an avocado toast without it. Although it’s fun to experiment, also know that sometimes the basics are sometimes best. Salt + fat + acid is the key.
